I also would use this piece of information.
I'm running joomla 1.0.12
The site must have three languages: italian,english and chinese
Because of a lot of problem, I had been suggested to convert my site in utf8. So that my database is now utf8, my languages file are utf8 (better, should be. I have to check, actually).
But I'm facing a lot of new problems (module titles, section/categories titles and so on). _That's why I havent yet published any of the languages.
I have a number of components and modules and I love to know whether, since the DB is already utf8, I can just overwrite the joomla core files.

You should be able to just copy over all the files provided that your database is already UTF-8. However of course make a backup first just in case.
